I like a Chateaubriand. Rub some olive oil and beef stock on both sides. Cook on grill pan. Toss a small drop of cognac at end set alight to blacken top. Rest for 5-10 mins. Should be pink but no bloody inside. It's the best ever.

I normally like my JOE medium rare. The only exception is SIRLOIN where I would go for Medium well.

Fillet steak is such a waste, I think because it is the most expensive on the menu people have it ...and then get it well done!
If you get chance look at the cuts available and pick the best looking one with some good fat in it and have the steak cut tyere and then.
Fillet, sirloin, rump etc on a menu doesn't really tell you much.
Don't cook it straight from the fridge, let it rest before and after cooking and season

Brisket - Slow Cooked
Rump - Medium Rare
Sirloin/Fillet - Rare
And quite partial to some Beef Wellington.

If it's rib eye then needs to be cooked medium to get the marbled fat rendered down all other cuts need to be rare.
Personal fave is bone in prime rib

Eye fillet medium, any blood/myglobin? whatever it's called and it gets cooked for longer.
